Les Remparts de Ferriere 1994, Margaux AC MC Top of Page
利俄弗城堡酒莊 , 產區:法國波爾多上梅度 瑪哥。 左岸瑪哥紅酒。正逢適飲期 , 成熟濃香 , 典雅, 酒體飽滿 , 氣味豐滿柔和 , 美好馥郁的黑醋栗果味和甘油味、杉木氣味和咖啡的醇香 , 細膩的單寧以及果味非常平衡和精緻。典型的瑪哥紅酒。拾年前如你嘗一口這款酒將會皺眉搖頭 , 難以入口;如今柔順的口感和醇香的層層釋放 , 令人愛不釋手。這就是波爾多左岸酒的珍貴和可愛之處。Les Remparts de Ferriere實際上是波爾多最小的著名頭等葡萄園酒莊Chateau Ferriere (Troisièmes Crus 1855) 的副牌酒 , 譯為 “鐵堡金盾”。

Fine apricot-honey flavour, structured fruit acidity, a well balanced fruity sweetness in the aftertaste.
David Yau:不愧是米勒 (Müller family) 家族的產品。此款冰酒采用灰品諾白葡萄品種 (Pinot Gris) 釀製 , 灰品諾品種釀製的酒通常單寧和酸度均衡,富有煙熏和香料味道。正如Jürgen Müller所述 , 此酒果香、甜度和酸度完美 , 個人認為果香富熟带水果的風味 , 有濃郁的番荔枝和山竹的甜酸之和諧與甜美 , 雖然灰品諾品種釀製的酒一般適合早期飲用 , 但德國的冰酒相當奇特 , 2004年仍太年輕 , 再過五年飲用應會有更佳的風味、層次更豐富和醇香的石油礦物味。

BB Zhow called me to attend a tasting party and he knows me liking a fascinating label than drinking. The wine of riesling from the Pfalz, one of Germany's more southerly wine regions. Delicious riesling, a pale colour , the nose is quite floral and mineral, with plenty of ripe pears and lemons, full clean apple pear and together with other citrus fruits flavours on the palate , just a hint of being off-dry (but someone felt quite dry) before tangy sherbet lemon and grapefruit acidity firms-up the finish.

Domaine Wachau (Austria) Wachau Collection Grüner Veltliner 2007
This week I attended a tasting organised by 'The Bunch', a small group of independent wine merchants including Berry Bros, Corney & Barrow, Lay & Wheeler, Yapp Bros, Adnams and Tanners. It was superb tasting, just crammed to the gunnels with characterful wines. It was such an antidote to big brands and the half a dozen big grape varieties, and I'm absolutely

sure several of the wines on show will be featuring as 'Wine of the Week' or 'Wine of the Month' soon. This is a little star from the 300 year old cellars of Domäne Wachau, now under a dynamic young team headed by general manager Roman Horvath and enologist Heinz Frischengruber. Its a seriously authentic and delicious expression of 'Gru-V', with white pepper, herbal and floral notes set against sweet, ripe pear fruit. There's a hint of opulence on the palate, but such juicy orange acidity streaks through the finish that this is mouth-watering and brilliantly easy to drink.

阿爾薩斯 (Alsace) 的 Alain 先生轉道德國法蘭克福 (Frankfurt)今晨 6時55分一早飛抵香港。中午在鯉魚門品嘗海鮮。Alain 帶來的阿爾薩斯特產雷司令 (Riesling) 和鳥兹拉米納(Gewurtztraminer)很受眾人歡迎 (見圖)。尤其後者的荔枝水果的特色口味和氣味 , 連最少專門知識的初飲者都能享用 ,可惜偏甜 。阿爾薩斯葡萄酒中的絕大多數為「乾 (Dry)」, 酒體清淡到豐滿 , 帶明顯的果香味和天然氣味的葡萄酒 , 並且這種香味和氣味不是由釀酒工藝 , 而是由於生長在這里的葡萄和土地的原因而產生。如 , 阿爾薩斯的白葡萄酒沒有因裝在橡木桶中而產生熏烤味和木桶氣味。杰烏兹拉米納在阿爾薩斯裁培面積占第三位。

在全世界所有的葡萄產區的這種葡萄裁培地點中 , 毫無疑問阿爾薩斯的氣候、陽光和土地是最适合的。從這一點也就可以看出阿爾薩斯的杰烏玆拉米納葡萄酒的質量該有多麼好。這支酒的最佳飲用溫度是: 8-10℃。Gewurztraminer 在法國阿爾薩斯當地的發音應是 Guh-verts-tra-mee-ner , 据說是德語。對不對 ? 請住在德國法蘭克福的施維女士 與 Muller 指正。

 

雷司令 Riesling Sporen Grand Cru (AOC) Top of Page

女兒 的生日是新曆10月7日 , 她說比阿嬤的户口上的生日遲一天(母親是10月6日)。她說要提前6日今日做生日 , 也因7日要出外旅行。並點吃陽澄湖大閘蟹。我家猶如餐廳 , 可以電話預訂點餐。不過酒還得我挑選。今晚我選了一瓶法國 Alsace Riesling (見圖) , 屬 Alsace Sporen的特級酒 (Alsace Grand Cru AOC)。我曾與 Alsace 的酒商 Alain 先生一起品嘗過這支酒。酒的顏色淡檸檬黃稻草色。聞之異香, 有百花香和熱帶水果的香味 , 也有點苹果和青檸的果香。味道成熟而豐濃 , 有雷司令(Riesling)釀製葡萄品種特有的沁人心脾的酸味。整體均衡 ,留香長而甘美。但年份 2004 年太年輕了, 藏釀幾年可達更理想狀態。

飲用溫度最佳 8-10℃。搭配白魚和奶酪較好 , 也可搭配豬肉和泡菜。今晚用來搭配大閘蟹 , 是首次嘗試。

「杜‧拉蓉」葡萄園區 - Cateaux du Layon (AOC) Top of Page
開了一瓶法國盧瓦尔 (Loire) 的白葡萄酒 , 屬「杜.拉蓉」葡萄園區 (Cateaux du Layon) 的甜葡萄酒。這種自然甜的葡萄酒是采用熟透的 , 受貴腐病菌 (botrytis cinerea - 「Noble rot」) 影響了的白謝寕 (Chenin Blance)釀酒葡萄品種釀制而成的。像波爾多的蘇特恩 (Sauternes)一樣 , 這種貴腐酒的甜度和酸度相當平衡 , 至少得陳放10年才能飲用。並且當酒到成熟時 , 它有一種杏、桃、青苹、蜂蜜和香料的清香味道和氣味。不同的是「波爾多的蘇特恩」的酒通常是白索維農 (Sauvignon Blance)與賽米翁 (Semillon) 两種葡萄品種混合 , 而「『杜.拉蓉』葡萄園區 (Cateaux du Layon)」的甜葡萄酒則由白索維農與白謝宁 (Chenin Blance) 葡萄品種混合釀制而成。

另外 , 上述「Sauternes」是法文 , 後有詞尾 「s」。 而在美國加利福尼亞所釀造的 Sauterne (英文 , 無詞尾「s」)葡萄酒 , 絕對與波爾多的 Sauternes 沒有相似之處。加利福尼亞的蘇特恩 (Sauterne) 是半甜、非常普通、廉價、用混合葡萄釀成的葡萄酒。而且這個州的幾個最大的釀酒廠家的大部分這樣的酒是用 4 - 5 公升的大瓶子灌裝和銷售的。
昨晚與 Cateaux du Layon 搭配的菜餚有: 廈門海蠣煎、清蒸太湖大閘蟹、印尼巴東牛肉 (淺辣)和台灣貢丸白菜粉絲湯。

西班牙古班士家族 Guelbenzu 的紅葡萄酒是伊布羅河 (Ebro) 流域的代表者之一 , Guelbenzu Lautus 1999, Notation Parker : 89 / 100。其酒的醇香、柔順和玫瑰、莓果、肉桂香氣濃郁十分令葡萄酒愛好者喜愛。(The wine is composed of 50% Tempranillo, 20% Cabernet Sauvignon, 20% Merlot y 10% Garnacha and spent 12 months in new oak from the Allier-forest. Guelbenzu Lautus is characterized above all by impeccable balance, sustained by tremendously rich mature tannins set against a tartaric acidity of 5,5 g/l and an alcohol level of 13%. It accords perfectly with the theory that macerated wines achieve their balance by virtue of opposite flavours i.e.: sweet flavour (alcohol) <=> acid flavour + bitter and astringent flavours. The resulting harmony is what confers roundness, maturity and generosity on red wines.)

Chateau Beaumont 1993 AC MC (彼夢酒莊) Top of Page

Haut-Medoc Cru Bou.
Chateau Beaumont was a vicarious red wine one, when a companion at a claret tasting saw fit to extol the virtues of this Cru Bourgeois property, prompted by his having recently opened, and enjoyed immensely it seemed, the 1990 vintage. His purchase seemed a little akin to insider knowledge, as I must confess that at the time I was not very familiar with the estate. In more recent years I have had the good sense to better acquaint myself with this under-rated Haut-Medoc chateau, and have come to appreciate these wines for their classically styled lines and, of course, their good value.

The colour shows some maturity here, displaying rich, mahogany tones as it is poured into the decanter; there was no sediment of note, though. A lovely, quite classic nose, with meaty, iron filing notes with a little baked twist to the plentiful fruit, with some hot spices too. Full, a little creamy on the palate, but with fine extract, and ripe, succulent tannins which are integrating well. Nicely structured, moderate and balanced acidity, with good length. It has cellaring potential, but to my tastes is just fine now. Very good indeed, and great value. This is lovely, for drinking over the next 8-12 years.

卡邦酒莊 (Chateau la Cabanne) 屬 Pomerol (龐馬魯) 二級 (Second Growth) 酒 , 是相當不錯的一瓶紅酒。Pomerol 的一級酒只有二種 : Petrus 和 Lafleur ; 二級有十二個酒莊 ; 三級有九個。能在 Pomerol 產區列入二級的 Cabanne (卡邦) , 酒質很濃厚、層次豐富。1982 年的 Cabanne 更被 R.Parker 評為94分。該酒莊的紅酒可取年份是 79 81 82 83 85 88 89 90 92 93 94 02。較佳年份是 82, 88,89和90。1982年的右岸酒 , 陳年20多年才開瓶 , 已很容易 , 但仍需醒酒一小時 , 品嘗時間持續三小時。酒色成熟 , 香氣渾厚、層層變化 , 初為木香黑果味後又香草、皮革和巧克力味 , 入口均衡圓滑和豐滿 , 尾韻持久。

卡邦酒莊 (Chateau la Cabanne) 葡萄園不大 , 種植面積 10ha , 品種 Merlot 94% , Cabernet France 6% , 平均樹齡 30 年。副牌酒 : Domaine de Compostelle

1855 年評級為頂級「二級酒莊」屬法國,波爾多,梅度,瑪歌 (Margaux) 產區的紅葡萄酒。與另一頂級「二級酒莊」Ch Rauzan Gassies 原同屬於 Chateau Rauzan之一部分,其後才分為各不同酒莊。
葡萄品種: Cabernet Sauvignon 61%, 35% Merlot 35%, Cabernet Franc 2%, Petit Verdot 2%。酒莊歷經波折, 自83 年起大有起色, 釀製出了全新不同以往風格的酒!大量使用新橡木桶陳酒,品質自然提升,加上酒評家 Parker 的推荐,最近酒價急升。副牌: Segla。
本支酒開瓶後有明顯的黑醋栗香、顏色近深紫色,混有核果及綜合香草等香氣,果香濃郁,酒體飽滿、豐富,融合 Medoc 獨特的平衡良好的氣味,酸度與單寧都比較均衡,餘韻綿長。The vintage of 1996, Notation Parker : 88 / 100。

1855 年分級「三級酒莊」, 位於波爾多, 梅度, 聖朱利安(Saint Julien)區。 葡萄用65% Cabernet Sauvignon, 25% Merlot, 2% Petit Verdot, 8% Cabernet Franc 。飲前兩小時開瓶, 色澤紫暗紅, 清香而帶點黑莓及石蒜類的花香, 木味和烤肉香氣豐厚, 順滑, 口感並不複雜, 卻單寧足夠而且均衡。再陳年3-5年 , 應會更有層次和不同的香味。但此酒一般不需太長久的陳年期。Notation Parker : 89 / 100 。副牌 : Les Fiefs de Lagrange 。

Dame de Coeur (紅心皇后) du Chateau Peyfaures /2003 Top of Page

法國“好年份”(Millesimes)葡萄酒雜誌評「紅心皇后2003」為:波爾多“一級優良葡萄酒 ”(PREMIERS GRANDS VINS.CLASSES)。
Chateau Peyfaures 已有178 年的歷史, 筆者譯為「碧富酒莊」並將莊主 Nicole Golden 精心釀製的 Dame de Coeur 引入本港和內地, 同時譯名為「紅心皇后」。「紅心皇后」酒瓶上的標籤設計,出自法國著名畫家 HIPPOYTE ROMAIN 的作品。Vintage 2003 廣受法國與國際酒評雜誌《Decanter》的推薦並獲得金獎;2005年, “紅心皇后”由 Robert Parker 評為 88-89 分 (Very Good),同時列入 Parker 的《2005 年份葡萄酒推薦精品》一輯。

「紅心皇后」Dame de Coeur 酒色呈深紫紅,入口味道醇美,口感絲滑,紛繁複雜的香氣中,混有黑果、栗子香和強烈而圓熟的肉桂味,朱克力的香氣,口感不斷變化,令人目眩。也許再過十年、八年品嘗會有更中肯的評價,現在品嘗(需透氣至少3小時),也可欣賞她的早期風格。

屬波爾多五大一級酒莊。1983 年的 Mouton 色澤濃厚 , 香味優雅、清醇, 帶有醇化的絲絲果香味, 馨香夾雜咖啡和煙燻感; 口感時而春光明媚, 時而秋風紅葉 , 桂花飄香。 由於飲前透氣不夠, 尚無法充分探到其纖細的優美感。卻也嘗到那特有的礦物感濃厚的高品質, 是一瓶佳釀。年份1983 Chateau Mouton Rothschild 在《1855》 "Notation 1855" 評為 :; Notation Parker :90 / 100" 。 ( Description : Château Mouton Rothschild 1983 : In the entire French vineyard, the story of the Château Mouton Rothschild is unique. 位於法國西南部的巴士.亞文邑不僅生產著名的白蘭地和阿馬略克燒酒 , 在 Cotes de Gascogne (加斯科尼山坡) 葡萄產區也釀製葡萄酒。Tariquet Chenin – Chardonnay白葡萄酒是當地的村酒 (Vin de Pays) , Varieties:75% Chenin, 25% Chardonnay, 12%vol (Grown, produced and bottled by Domaine du Tariquet )。這是一技很值得推薦的白酒 (Blanc) , 酒色清澄 , 略呈金黃 , 果香充沛 , 口感清爽、豐滿、蜂蜜感。特別适宜搭配河鮮、白肉和風味菜餚。價錢也很便宜, 約港幣50元 , 酒稅全免後 , 相信會更便宜。以下是酒莊的品酒筆記(Tasting notes):
Chenin Chardonnay, a unique recipe
The contrast between the Chenin’s minerality and the creamy Chardonnay is somewhat reminiscent of sweet and sour cooking. Fresh, bold and full of flavour at entry with underlying notes of ripe grapes, followed by suave complexity. Faintly floral shades of vanilla vie for position with lingering traces of toffee, while a touch of saltiness leads to a pleasantly surprising finish.

The bottle of wine from vineyard Domdechaney in village Hochheim, clean, limpid medium Yellow, dry, light body, quite rich. Touch of pineapple and citrus fruit on the nose. Fine, floral, honeysuckle fruit on the palate with a good and endless acidity. Good balance, refreshing, a topical example of grape Riesling. Very good future.
此款酒由德國萊茵高 Hochheim 村Domdechaney 葡萄園採收的麗絲玲葡萄所釀造。淡金黃色澤。聞之柑橘和鳳梨果香氣濃鬱。無甜味 , 酒質輕清而豐滿。百花味突出 , 帶有忍冬果的甜蜜 , 實凈清冽的酸味構成甚佳的勻和完美的口感。 典型的 Riesling 葡萄酒。藏釀幾年會更好。

2001 is shaping up to be a top-notch vintage for German wines, and recent tastings I have had from top Mosel producers seem to back that up. Here we have a wine from further south in the Pfalz area, where riesling can be very fine, but tends to display more weight and richer texture. That is no bad thing when the wines are as juicily balanced and fine as this. Lingenfelder is an ancient estate with a very modern attititude, and this "bird label" example is in fact an off-dry wine of Spätlese quality. It is an absolute summertime delight, with a nose

brimming with tropical, pineapple, lime-fresh waxy citus, and glacé fruits. There's just a suggestion of punchy gooseberry and something mineral too, that adds up to a deliciously complex but arresting picture. On the palate it has a luscious, freshly-squeezed apricot juiciness with plenty of weight and body, and an almost smoothie richness that is shot-through with a dazzling cut of apple acidity. A 5th Growth Bordeaux 1855 from Haut Medoc with 12.5% alcohol.
It is very pronounced & rich after breathing 2.5 – 3 hrs. Dark Ruby colour, its primary layer of aromas with full of blackberry, plum, blackcurrant. It's secondary layer is to have slightly toast, wood, leather. Bitter black coffee impact on the palate. It is very complex and a nicely composed wine. Masculine style and outstanding.

很少享用澳洲葡萄酒。也不熟悉澳洲的地理、氣候和葡萄園的土壤。以品用舊世界的葡萄酒的口味, 酒評新世界的葡萄酒, 雖管見所及, 也不失權宜。
這款酒有著鮮明的深紫紅色, 黑莓果香濃郁, Cabernet Sauvignon 典型的覆盆子、黑醋栗、櫻桃香味明顯。 伴隨 Shiraz 成熟的桑椹果香, 但個性強。事後見酒莊介紹:“Shiraz 在不鏽鋼沉降罐發酵後部分吸取在法國橡木桶儲放熟成24個月……” 筆者品嘗時, 卻嗅覺到oak和法國橡木桶的香料風味, 真是無地自容。
整體來說 BENE Cabernet Shiraz 2001 是支容易入口的 Cabernet 與 Shiraz 混釀的酒款。一入口, 口感豐富圓滑、富有果香, 韻味適中。就市場價格來說, 能有這樣的水準已是很實惠的红酒了。

這款酒的前酒標, 實在很酷, BENE 的 brand label 遠看似意大利的 Sassicaia, 近看類以澳洲「伍爾夫‧布拉斯釀酒厰」最高等级的 Wolf Blass Black Label。Vintage Rating: 95T (Outstanding), Still tannic.

Deep crimson in colour, smoky cedar like aromas which are complemented by lovely ripe black fruit and eucalypt characters that are often seen in this characteristic Margaret River blend. The palate is soft and fleshy with ripe plum, chocolate and aniseed flavours. A silky long tannin profile compliments the soft palate giving it a refreshing savoury persistence.
讀完上述酒莊的酒評, 尤其對口感和尾韻長的贊美, 已不需筆者畫蛇添足。西澳盛產 “長尾雪松”, 红酒中呈現雪松的香氣是此款 Cabernet Sauvignon‧Merlot 混合酒的特性。儘管 Merlot 比例只佔 40%, 但仍微有朱古力的香味。與其說是澳洲葡萄酒, 不如說更似法國波爾多右岸的葡萄酒。其顏色為深厚的紫紅色;嗅覺上呈現

In a recent poll on Riesling here on wine-pages, 250 people voted. Over 90% declared that Riesling was either "the ultimate" white wine grape, or "certainly one of the best". Yet sales of Riesling on the high street remain absolutely tiny, whilst oceans of Chardonnay and Sauvignon Blanc are lapped up. Here's an example of a cheap, modern, just off-dry Riesling from the Mosel Valley in Germany, which might just win a few converts. 2001 is a fabulous vintage in the Mosel, and quality shines out from even a basic wine like this (note the vintage

date is on the back label). The nose is deliciously inviting, with lime, lemon and hints of waxiness, and a tiny note of minerals and salts. On the palate it is has sweet, crunchy essence of fresh apple fruit. It is medium-bodied and crisp, with good lemon acidity keeping it quite dry, though there is a hint of sweetness that would make it a great match with spicy foods.

"唐唐" 的叔公送一瓶红葡萄酒, 酒標上標明 PINOT NOIR (黑品諾), 屬單品種酒, 無標示產地國, 見有法文 Vins 主觀以為是法國酒。瓶觀殘舊, 年份1888, 瓶盖穿孔, 瓶頸空四公分, 估計儲放不當。當晚, 與女兒即開瓶品嘗。瓶塞 (cork) 已變質腐敗, 如要完整木塞, 只能氣壓開瓶。也許有四公分的距離, 酒質並無受變質瓶塞污染(corky)。仍有典型的黑品諾的果香, 酒色成熟, 單寧平

順, 酒體不厚, 初感不乾不酸也不偏甜, 個性強, 但很快果味開始轉化成半熟的果糖味並有燒烤味。不似法國黑品諾; 沒有勃艮地的雅緻, 也沒有阿爾薩斯的清纯。再看酒標, 沒有酒精度也沒有容量標示, 如意大利的單酒, 只標葡萄品種和產地。標示有:GRAND VIN DU VALAIS 法文。VALAIS 應是瑞士的一個州, 瑞士的葡萄酒多半產自法義語區, 葡萄品種以黑皮諾(Pinot Noir)為大宗, 日內瓦湖沿岸山坡以及高山林立的瓦萊州(Valais)是主要產地。最著名的馬特洪峰(Matterhorn)就在瓦萊州(Valais)。断定這款酒是瑞士的黑品諾葡萄酒, 應該不會錯。
瑞士葡萄酒法規是參照法國原產地命名制度(AOC)制定的,也叫AOC。一般來說, 本港很難喝到瑞士葡萄酒, 重要原因是其一直極少出口。不過, 一些國際葡萄酒大賽,特別是世界黑皮諾葡萄酒競賽上, 瑞士酒也頻獲佳績。

我一直對法國南方 Mos Neuf 酒莊的VDP很有好感, 莊主 Mr.Luc Baudet釀製的 「2003 ARMONIO VDP」 品質奇高, 一般 AOC 及不上。而酒瓶類似布艮第瓶, 連酒招的簡约都有點相似。當K.HO 拿出LE FORT SAINT PIERRE 2001 這款酒時, 我就武断地說, 「這是南法的 VDP」只講對了一半。此款酒產自科特‧魯西永(Cotes du Roussillon) AOC 產區, AOC级。

也許該區與西班牙相比鄰之故, 多少深受西班牙的影响, 红葡萄酒大都充滿香料氣味, 柔順易入口。由於采用卡日戈楠 (Carignan)、黑格連纳什 (Grenache noir)和至少40%的混合葡萄 (西拉和穆维德里Mourvedre占50%), 酒色呈深而凝缩的紫红, 聞之有成熟的小红果和黑李子的香氣, 質地濃重, 微带單寧酸味, 與果味勻和良好。柔滑怡人, 留香長。酒的柔順、易入口使我感到有神索 (cinsault) 葡萄品種調配。 後, K.HO 给我看了成份如下:
Carignan 25% planted in 1878- Grenache noir 25% vine 70 years- Mourvedre 25% vine 35 years- Syrah 25% vine 25 years
混合葡萄中並沒有神索 (cinsault)。但對酒莊的 Carignan 的老樹齡, 感到驚訝。如這款酒的 Carignan 佔 75%, 酒標上應可標上V. V. (Vieilles Vignes )老樹根葡萄酒了。
