匈牙利的托凯.阿蘇葡萄酒 (Tokaji Aszu) 早在16世纪就聞名於世 , 享有「世界上最卓越的甜白葡萄酒」 的美稱.,.與波爾多蘇玳 (Sauternes) 的甜白酒.,.德國萊茵河谷的 TROCKENBEERENAUSLESE , 簡稱:TBA (天比愛) 甜白酒呈三足鼎立之势 , 並列世界三大著名貴腐甜白葡萄酒。
上等的阿蘇葡萄酒 (Aszú wines), 最少要在「基础葡萄汁」中加入3 斗 (Puttonyos)貴腐阿蘇白葡萄精華汁液 , 1斗為一级 , 最高等级的托凯.阿蘇葡萄酒 , 要加入6斗貴腐阿蘇白葡萄精華汁 , 為最高等级6级。每加入1斗貴腐阿蘇白葡萄精華汁 , 就必須要在橡木桶里多醇化一年。
而至尊的 Aszu Esszencia (阿蘇精華) 則是非每一年都可以生產 , 必須是極好年份 , 由受貴腐菌侵襲過的Furmint 葡萄品種精製。其糖份極高的葡萄汁是自然漏滴出來的濃缩精華液 , 即貴腐阿蘇白葡萄精華汁, 由於葡萄汁糖份極高 , 發酵緩慢 , 等閒 6年以上。釀成 1 瓶托凯.阿蘇精華 (Tokaji Aszu Esszencia) 葡萄酒 , 也需要用200磅的貴腐葡萄 , 其產量之少 , 價格之昂貴是可以想象的。Aszu 之中的 6 PUT , 已是最高等级的托凯.阿蘇葡萄酒 , Aszu Esszencia (阿蘇精華) 則是皇上皇 , 有機會遇到不妨試試 , 其實 , 3 斗(PUT) , 已相當不俗。

阿蘇精華 2003

Gold colour, with marked legs. In the nose it is very complex: aszú berries, ripe and dried apricot, mushroom, green tee, hazelnut, vanilla, caramel. On the palate is really smooth and complex: apricot, vanilla, brittle, tobacco.  The high sugar is counterbalanced with vibrant and lively acidity. Unbelievably long finish with the flavour of apricot and orange peel.

This luminescent, viscous, apricot hued aszu is truly sublimed experience for the senses. The wine is characterized by vibrating taste and smell cavalcade. Its acidity and sugar are in perfect harmony. Beside of its extreme fruitiness (apricot), the creaminess is unforgettable and during the new oak barrel maturing discrete roast aromas arise. It could be well paired with delicate cakes or caramel-vanilla ice creams.

托凯阿蘇 5斗 2000

 

Light golden color. In the nose matured perfume with apricot, soil, mushrooms and bothrytis signs with roasted aromas coming from the new oak fermentation and aging. On the palate ripened flavours with a little bit of acrimony and smokyness. It could be well paired with foie gras or desserts.
