Wine Growing Areas in Germany/德国葡萄酒產區

German Wine distinguishes from wine other countries through its lightness, liveliness and fruitiness. These attributes of German Wine ascribe to the particular climate and soil conditions. The German Wine Growing Areas are mostly concentrated in the South and Southwest of Germany. They belong to the northernmost wine growing areas worldwide. They are located between the warm and humid gulf-stream -climate in the West and the dry continental climate in the East. The long vegetation period and the mild and not too hot summers are the basis for filigree wines with not too much alcohol. German Wine offers a large variety of different types and characters. Diverse soil textures and more than 100 different grape varieties which grow in 13 German Wine Growing Areas are the reasons for such a diversity 75% of the wine growing area in Germany are dedicated to the 10 most popular grape varieties. Among the most important and most famous grape variety is the Riesling. Internationally highly reputated it evolved to be very trendy in the meantime. It is a quite old grape variety which was firstly mentioned back in the 15th century. Its growth, the size of the grapes, the long period of ripeness and the resistance against frost are evidence for the relationship to wild grapes. The Riesling is a slow ripening grape variety. The fruity acid is its most outstanding element. Therefore it is predestined for the northern wine growing areas where it ripens in the late autumn sun. The Riesling demands high requirements for the location (energy) but rather low requirements for the soil texture. Depending on the location (sort of soil and microclimate) one will get different shaded wines. Optimal conditions provide the heat storing and stony steep slopes along the river valleys.

德國葡萄酒的特點首先來自於特有的產地和寒冷氣侯，位於「葡萄酒生產帶」最北極限。這裏的葡萄大都種植在河谷地區，南起的康士坦丁湖沿著萊茵河及其支流，北抵波恩的米特萊茵，西從法國的接壤地區，至東部的易北河。全德國葡萄酒產地共分為十三個特定葡萄種植區，如摩薩爾、萊茵高、萊茵黑森、烏爾藤堡、巴登、法爾茲等。每一個產區都有自已的特徵。北部地方生產的葡萄酒一般清淡可口，果香四溢，芳香馥鬱，幽雅脫俗，並有新鮮果酸。而南部生產的葡萄酒則圓滿充實，果味誘人，有時帶有更剛烈的味道而不失溫和適中的酸性。德國生產的 Riesling(雷司令) 葡萄酒是世界最好白葡萄品種之一。 最常見到的德國酒是來自摩薩爾(Mosel)河流域和萊茵(Rhein)河流域的四個主要產區：摩薩爾(Mosel)、萊茵高 (Rheingau)、萊茵黑森(Rheinhessen) 和 法爾茲(Pfalz)。

(1) 摩薩爾  (Mosel)
摩薩爾 (Mosel) 產區 , 以前稱摩澤爾．薩爾．胡爾 ( Mosel．Saar．Ruwer ) 產區 , 是世界公認的德國最好的白葡萄酒產區之一。該區廣布在摩薩爾河、薩爾河、胡爾河三大流域 , 是德國代表性葡萄酒產地。100% 生產白葡萄酒。清爽如花般的香氣及豐盈的酸味度與淡淡的甜味之完美平衡是該產區白葡萄酒的特徵。酒精度大多在10% vol 以下。

(2) 萊茵高 (Rheingau)
萊茵高是德國最佳的葡萄酒產地 , 知名釀酒廠聚集於此。 葡萄品種以雷司令 (Riesling) 為主體 , 也栽培此地孕育出的米勒．土高等品種 , 釀成沉穩、強勁與優雅兼備、果實味豐盈而優雅的白葡萄酒。此外 , 萊茵河所產生的霧氣催化貴腐菌孶生 , 培育出世界著名的貴腐葡萄。相比摩薩爾 (Mosel) 的白葡萄酒而言，萊茵高 (Rheingau) 的白葡萄酒不論是顏色，香氣，口感，酒體都更重。如果說摩薩爾(Mosel) 的酒是莫札特，那麼萊茵高 ( Rheingau) 的酒就好比貝多芬。

(3) 萊茵黑森 (Rheinhessen)
萊茵黑森是德國最大的葡萄酒產區，葡萄園的面積有 26372 公頃。其中 23% 種植米勒．土高 (Muller-Thurgau)，13% 種植席瓦納 (Silvaner)，9% 種植雷司令 ( Riesling)，9% 種植施埃博 (Scheurebe)，肯納 (Kerner ) 和  巴庫斯 (Bacchus) 各占 8%。內有 3 個子產區：Binern, Nierstein 和 Wonnegau，24個酒村，434個單一葡萄園。萊茵黑森的葡萄酒整體而言大多是輕柔、纖細的酒款。MSE 系列的 Gres 酒莊的各種酒款典型地代表了該產區不同的獨特雅典風味 , 從中可以品嘗到多樣豐富的不同口味的葡萄酒。

(4) 法爾茲 (Pfalz)
Pfalz原文為“宮殿”的意思，因古羅馬皇帝奧古斯都在此建行宮而得名。以前此地區也被稱作Rheinpfalz “萊茵法爾茲”，葡萄園面積達到 23804 公頃，是德國第二大葡萄產區。所產77%為白酒。法爾茲 , 自與法國的邊境起 , 沿著德國葡萄酒街道南北延伸的區域。擁有得天獨厚爽朗的南方風土氣候 , 孕育出厚實、力道強勁的葡萄酒。這裏葡萄種植的品種比較豐富 , 栽培葡萄品以雷司令、 米勒．土高、可爾納 (Kerner) 為首的多種葡萄品種 , 可以享受品嘗多樣不同品種葡萄酒的樂趣。法爾茲產區是 MSE 的重要釀酒基地。

(5) 萊茵中部 (Mittelrhein)
萊茵河中部地區特別是以從波恩到賓根的萊茵河段的萊茵山峽聞名。萊茵河在這裏通過兩邊的層岩丘陵勾畫出它的河道，形成一陡峭、狹窄的河谷。此地的小氣候已經讓葡萄花盛開了2千多年。岩石上的葡萄架和中世紀的古城堡廢墟，山岩上的古代傳奇人物 (Loreley，Nibelungen)令人流連忘返。萊茵河中部地區有久遠的迷人傳說和葡萄酒市場。清新、香氣誘人的雷司令葡萄酒是該地區的標誌產品。

一 , 德國白葡萄酒‧雷司令（Riesling）

德國的葡萄酒在世界上佔有重要的地位。德國是歐洲傳統種植葡萄，釀制葡萄酒的國家，有著悠久的釀酒歷史。早在數百年前，德國就已釀造出了美味柔順的葡萄酒，其天然醇香和恰到好處的甜度和酸度的平衡，使得德國葡萄酒享有盛名。德國因地處的緯度高，其葡萄酒產區已經是在葡萄種植的最北界限，決定了那裏的葡萄品種喜冷耐寒，釀酒用的葡萄種類也就多以耐寒的白葡萄為主。但得天獨厚的是，它被海灣的溫暖氣候所滋潤，也因其氣候寒冷，反而賦予德國白葡萄酒極優雅及細緻的品質，目前國際市場上有許多價值昂貴及品質優異的白酒便是出自德國。尤其是知名的葡萄品種雷司令（Riesling），從乾到甜，清新純美，富花香果味，各種不同類型的甘美白葡萄酒，都很容易打動即便是初涉酒壇的人。

德國是白葡萄酒的故鄉。德國不僅是冰酒的發源地，也是「晚收成」葡萄酒的起源國。法國波爾多的蘇玳區(Sauternes)在世界上以「晚收成」酒著稱，但其第一次晚收成是在 1847 年，而德國萊茵高(Rheingau)的首次晚收成是在1775年，比法國釀制晚收成白葡萄酒，早了72 年。

雷司令（Riesling）是世上一種非常好的白葡萄品種，其子孫散佈在法國愛爾薩斯、新西蘭、美洲和南非等世界各地。但是，德國是她的故鄉。「她」還有一個女性的名字，叫「麗絲玲」。這種白葡萄所釀造的酒芳香、清爽可口。在德國 13 個產區中，Riesling 一直是上好德國白葡萄酒的靈魂。在一定程度上，白葡萄酒和雷司令成了德國美酒的代名詞和標誌。

在德國，白葡萄酒產量占88%以上。德國白葡萄酒酒精含量較一般葡萄酒來得低，很少有超過10%vol的，更重要的是好的德國白葡萄酒又有足夠的酸度來中和其天然殘留的甜味，致於讓人有甜膩的感覺 ; 加上在冰到攝氏 8 – 12 度之間飲用，真正是炎熱夏季裏最佳消暑飲料 !  Riesling更是德國白葡萄酒的經典，正如其名「麗絲玲」，她端莊秀麗，精緻優雅，透著貴族氣質 ; 又如其銜「雷司令」，豐滿厚實，雅致內涵，盡顯雍容統帥大氣。不論是清淡或辛辣的亞洲菜肴，與其搭配，相得益彰。

Wine Growing Area - “Pfalz”

The winery Eugen Müller in Forst was established in 1935. It arose from a cooperage with viniculture which had existed since 1767. Today the family Mueller is managing the winery in two generations.
The specialities of this winery are delicately fruity, mineralized wines and Rieslings full of essence. They grow in the excellent vineyards of Forst. The basalt content of the soil there is used as a heat reservoir.
References:
The magazine „der Feinschmecker Weingourmet“ included the winery into the 450 best German wineries in September 2002. The “Gault Millau“ awards the winery with 2 grapes since 1997. According to "Eichelmann- Deutschlands Weine" the Rieslings of Eugen Mueller belong to the best ones in the Pfalz and in Germany of the actual vintage. “A great collection!!”

Eugen Mueller 酒莊建於1935 年 。實際上 , 1935年時 , 是將建於1767年的老葡萄莊園進行改建 。目前由Mueller家庭兩代人經營。該莊園的雷司令酒果味異香獨特﹐含有雷司令的典型礦物質氣味。
